This delicious cake is made with spices and cinnamon apple jelly for a simple and delicious fall dessert!
Ingredients
Cake:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon apple pie spice
1/2 teaspoon salt
1/2 cup butter (at room temperature)
1 cup granulated sugar
2 large eggs (at room temperature)
1/2 cup quick 1-minute oatmeal
3/4 cup Grandma’s Jam House Apple Cinnamon Jelly
1 teaspoon vanilla extract
1 cup sour cream

Topping:
1 cup light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped pecans
,
Icing:
1 1/2 cups powdered sugar
4 tablespoons heavy cream
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350.
2. Grease a 9x13-inch pan and set aside.
3. Mix the topping ingredients in medium bowl and set aside.
4. Sift the flour, baking soda, baking powder, salt and apple pie spice together into a medium bowl.
5. Cream the butter and sugar together in a large bowl until light and fluffy.
6. Add the eggs one at a time, beating well until combined.
7. Mix in the oatmeal, apple jelly, and vanilla and beat until combined.
8. Add in the dry ingredients and the sour cream and mix well.
9. Pour half of the batter into the prepared 9x13-inch pan.
10. Layer with half of the topping mixture.
11. Cover with remaining batter and sprinkle with remaining topping mixture.
12. Bake 40 - 50 minutes until toothpick inserted in center comes clean.
13. Mix icing ingredients together, adding extra heavy cream or confectioners' sugar, if necessary, to reach desired consistency and drizzle over cake.
14. Serve warm with vanilla ice cream if desired.
