Strawberry Oatmeal Bars

The fruity filling and fluffy coconut topping make these strawberry oatmeal bars one of a kind.


    • 1-1/4 cups all-purpose flour
    • 1-1/4 cups quick-cooking oats
    • 1/2 cup sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 3/4 cup butter, melted
    • 2 teaspoons vanilla extract
    • 1 cup Grandma’s Jam House strawberry jam
    • 1/2 cup sweetened shredded coconut


1. In a bowl, combine the first 5 ingredients.
2. Add butter and vanilla; stir until crumbly.
3. Set aside 1 cup.
4. Press the remaining crumb mixture evenly into an ungreased 13-in. x 9-in. baking pan.
5. Spread jam over crust.
6. Combine coconut and reserved crumb mixture, sprinkle over preserves.
7. Bake at 350° until coconut is lightly browned, 25-30 minutes. Cool.
• Bake in muffin papers for ease of clean up. Baking time about 20 minutes.
• Substitute chopped nuts for coconut
