Sicilian Meat Roll

The addition of ham and mozzarella will make this your family’s new favorite meatloaf!

Ingredients

    • 2 beaten eggs
    • ¾ cup soft bread crumbs
    • ½ cup tomato juice
    • 1 tablespoons parsley
    • ½ teaspoon oregano
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 1 clove Grandma’s Jam House picked garlic, minced
    • 2 pounds ground beef
    • 8 thin slices boiled ham
    • 6 ounces mozzarella cheese, shredded

Instructions

1. Combine eggs, bread crumbs, juice, parsley, oregano, salt, pepper, and garlic.
2. Add beef, mix well.
3. On waxed paper or foil, pat meat into a 12 x 10 inch rectangle.
4. Arrange ham on top, leaving a small margin around the edges. Sprinkle cheese over the ham.
5. Starting from the short end, carefully roll up meat, using paper to lift.
6. Press together to seal edges and ends.
7. Place meat, seam side down, in a 13 x 9 x 2 inch baking pan.
8. Bake at 350 for about 75 minutes.

*Center of roll will be slightly pink due to ham.
