Pepper Jam Meatloaf

The addition of pepper jam gives this “basic” meatloaf a delicious punch of flavor. Try it with sweet pepper jam or for a kick, try hot pepper jam!

Ingredients

    • 2 cups panko bread crumbs
    • 1/2 cup whole milk
    • 2 large eggs, beaten
    • 1 cup onion, minced
    • 1 tablespoon garlic, finely minced
    • 1 cup Grandma’s Jam House Sweet Pepper Jam divided
    • 3/4 cup ketchup, divided
    • 1 teaspoon kosher salt
    • 1 teaspoon Italian seasoning
    • 1/2 teaspoon freshly ground black pepper
    • 1 pound ground beef
    • 1/2 pound ground pork

Instructions

1. Preheat oven to 350
2. Place a baking rack over a foil-lined, rimmed baking sheet. Spray the rack with nonstick spray.
3. In a large mixing bowl combine breadcrumbs, milk and eggs.
4. Stir in the onions, garlic, Italian seasoning, ½ cup of the pepper jelly and ¼ cup of the ketchup along with the salt and pepper.
5. Thoroughly mix to incorporate all the ingredients.
6. Add the beef and pork and stir just long enough to combine but don’t over mix.
7. Form the meat mixture into an even loaf and set in the center of the rack.
8. Mix the remaining half cup of jelly and half cup of ketchup in a small bowl.
9. Saving about 1/3 of the glaze mixture, brush glaze over the meatloaf.
10. Bake the loaf at 350°F for 45 minutes.
11. Remove from the oven, brush with the glaze that was set aside.
12. Bake for another 15 minutes.
