1. In large bowl, combine 1 cup oats, sugar, and peanut butter and mix until well blended.
2. Form dough into 1 ¼ inch balls.
3. Flatten each ball into ¼ inch thick circles.
4. Place ½ teaspoon of jam in center of each circle.
5. Wrap dough around jam.
6. Pinch edges to seal, shape into ball.
7. Repeat with remaining jam and dough.
8. Roll balls in remaining oats.
9. Refrigerate for 30 minutes on a parchment-lined baking sheet.
10. Transfer to an airtight container.
11. Store in the refrigerator.
