This light and airy gelatin fruit mold recipe is a classic that will remind you of your childhood. It’s still a hit today and perfect for potlucks adding a retro vibe to your table.
Ingredients
1 - 20 ounce can crushed pineapple
1 package unflavored gelatin
¼ cup Grandma’s Jam House Mint Jelly
¼ cup Grandma’s Jam House Apple Jelly
1 cup Heavy Whipping Cream or 2 cups Whipped Topping
Instructions
1 Drain Pineapple and reserve juice.
2 Soften gelatin in ½ cup of Pineapple Juice.
3 Place over low heat, stirring constantly, until gelatin is dissolved.
4 Remove from heat, add jelly and stir until melted.
5 Add pineapple and the rest of pineapple juice.
6 Chill until thick and syrupy.
7 Fold cream into mixture. Turn into a lightly oiled 4 cup mold. Chill until set.
* If you don't have a gelatin mold, you can make this in a normal baking dish for ease.
