These irresistible “cookies” are delicious and so easy to make! They can also be customized with whatever jam you like or have on hand. Try peach, apricot, blueberry, black raspberry or any of Grandma’s Jam House’s delicious flavors!
Ingredients
1 cup flour
1 cup Old Fashioned Rolled Oats
1/2 cup light brown sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, cubed at room temperature
1/2 teaspoon almond extract
3/4 cup Grandma’s Jam House fig jam
Instructions
1. Preheat oven to 350 degrees.
2. Grease 8×8 baking dish and set aside.
3. In a large bowl, mix flour, oats, sugar, baking powder and salt.
4. Mix in butter using a fork, pastry blender or hands until combined.
5. Gently mix in almond extract.
6. Reserve 1 1/2 cups of mixture.
7. Press mixture on the bottom of prepared baking dish.
8. Spread fig jam on top.
9. Sprinkle reserved flour and oat mixture on top of fig jam.
10. Bake on the center rack for 35 to 40 minutes until golden brown.
11. Cool before cutting into squares.
