These tasty cheesecake bars are full of cheesecake flavor and fruity jam goodness! The perfect easy dessert treats with Damson Plum, but equally as fabulous with raspberry or blueberry jam!
Ingredients
1-3/4 cup graham cracker crumbs
3/4 cup brown sugar, firmly packed
6 tablespoons melted butter
1 - 16 ounce package softened cream cheese
2/3 cup granulated sugar
3 eggs
1/2 cup Grandma’s Jam House Damson Plum Jam
1/2 cup chopped almonds
Instructions
1. Preheat oven to 350 degrees.
2. Mix cracker crumbs, brown sugar and butter.
3. Set aside 1/2 cup of the crumb mixture and place the remaining crumbs in a 9x13 inch baking pan.
4. Press firmly onto bottom off the pan and set aside.
5. Beat cream cheese, sugar and eggs with electric mixer on medium speed for two minutes or until well blended.
6. Pour over the crust.
7. Carefully spread preserves over cream cheese mixture.
8. Stir almonds into remaining crumb mixture, sprinkle evenly over preserves.
9. Bake 40 minutes or until the center is set and top is golden brown.
10. Cool to room temperature.
11. Refrigerate for several hours or until chilled.
12. Cut into bars and serve.
13. Store in tightly covered container in refrigerator.
